Today I felt the need to honor my Irish heritage. But since I’m only 15% Irish, and because my grandma was never the good cook in the family (sorry grandma), I won’t be sharing any special Irish recipes. Instead, to celebrate Saint Patricks’ Day, I will be sharing some vibrant green recipes to get you inspired for springtime!

I have noticed the local farms are very busy getting their crops in order. Leafy greens are the first items to be harvested locally this season, such as baby heads of lettuce, baby spinach, arugula, kale, bok choy and mustard greens.

If you’re anything like me, you need more substance to your salads than just a few vegetables. Those kinds of salads are the type that come before the real meal. So I will be sharing some of my favorite unique ways to use greens, but also some recipes I plan on trying this spring.
